About Cloughjordan House
Cloughjordan House is a family run private wedding, corporate events venue and cookery school. With a focus on providing genuine hospitality, sustainably sourced food, and a welcoming, helpful team. Our walled garden provides many of the vegetables, herbs, fruits and flowers for our cooking school and events, while other produce is sourced as locally as possible from artisan producers. Job Description
Work alongside a team of chefs in our busy wedding venue catering for up to 180 guests and 38 bedrooms.
Overseeing and participating in the preparation and cooking of all food required for weddings, breakfast, group meals and BBQ’s over a wood fire.
From time to time you will be working with the team to teach cookery classes to clients in the purpose built cookery school.
You will have access to our walled garden and will coordinate with our gardener to grow all the vegetables and fruits organically.
Assisting in the planning and costing of menus
Ensure all statutory hygiene requirements are diligently followed
Liaise with the management and FOH team regarding dietary requirements, special requests, VIP’s etc.
Ensure proper receiving and food storage standards in the kitchen, checking dates, quantities and quality of products
Manage kitchen stock taking and inventory supervision, including rotation of stock. Ensuring that the stores are kept controlled, secured and rated correctly
Frequently review and taste finished products for quality and presentation
Able to work a flexible schedule including weekends.
Operates under lean management principles and constantly on the lookout for creative and new ideas to add value to our service.
Awareness of our brand values and advocacy
Experience
Previous experience in a similar role in a 4 or 5 star hotel or restaurant. A strong culinary background with banqueting/ event experience.
Excellent communication skills. A passion for exceptional food and the ability to work well within a team environment.
Sound awareness of menu planning and development
Have an understanding of how to keep costs in line and wastage kept to a minimum
Have strong attention to detail
Have the ability to handle busy situations and manage your workload effectively.
Good understanding of useful computer programs
Be legally eligible to work in Ireland
